Title: assigning textures to a nif

I've run into several problems like this both while installing and repairing ships, plus occurences with my own kitbashing.  Besides what I've already learned from Baz, I need to know how to tell the MODEL to apply textures at certian points.  I'd also like to reassign texture sets for simpler redecorating or repairs.

How exactly do you mean? Do you mean assigning new textures not originally part of the original model?

using a UV other than in the default configuration, which tends to overlay parts on top of each other.  also, I have a model that includes an impulse texture, but they forgot to tell the model to USE the impulse texture :P

You'll have to use a proper 3d modeling program such as Blender, Milkshape, or Max in order to change the way a ship is unwrapped. Also, this is not as easy as you think it is. Reassigning textures is easy, unwrapping models is not.
