No credit is given for anything seen in the videos.
I think the 3rd Era guys would especially be interested in the video marked 'Star Trek Charleston Recruitment Video'. *HINTS: Music, Excalibur, First Trailer*.

Well, first off, the music for the video I mentoned was taken directly from the first trailer of 'ST:Excalibur'. Also, Lord Bile wasn't credited for his Charleston model. The whole battle sequence from one of the videos was taken from the fan film 'Star Wreck: In The Pirkinging'. And, the maker of the videos is attempting to pass off ST: Bridge Commander as a fan made simulation. That in itself is probably grounds for legal acts by Totally Games.
Need I go on?
Not one of any of the mods or video seen in any of those YouTube clips has received credit for their original creators.

used the same galaxy quest theme as hidden frontier did except sped up too much. What are they always shooting at anyways?

Unless Excalibur's music was original, there's no real claim to say "they ripped us off."
They might be copying Excalibur, but as Mark said "Emulation is the Highest form of Flattery."
And you could pretty much say the same statements about 90% of all users on Youtube. Or the internet, in general.

I agree, especially the footage ripped from Star Wreck. That was some top quality footage that he/she/they used with no credit given.
