Besides, though JJ undoubtedly has some influence, it's more than likely nothing more than a "That looks cool" or "Can we try this and see what it might look like?". Remember JJ is the director. For the most part, he deals with the actors and I doubt he gets too nitty gritty with the design of the starships.
However. There IS undoubtedly going to be some Star Wars influence. Ryan Church, who is most noted for designing the redesigned 1701 did work on the Star Wars prequels. Now, before you hold that against him, those movies suck-factor depended on the fact that Lucas can't write his way out of a paper bag, Hayden Christensen and Natalie Portman can't act together one bit and make "romantic" scenes that make people want to barf, and the pacing for the movies was too fast at times and too slow at others. Ryan Church had nothing to do with that. I don't think.
"Too sci-fi"? Ummm....what were you expecting, Kirk and Spock to be fighting orcs and dragons or something? Star Trek's always been science fiction.
And GOD Nimoy is OLD! O.O But man, he still has the voice, and that's the important thing. ^_^
